Omakase (お任せ) is a Japanese dining style meaning "I'll leave it up to you," where you entrust the chef to curate a multi-course meal, often seasonal, using the freshest ingredients, creating a personalized, trust-based culinary journey from light to heavy dishes, common in sushi but also applicable to other Japanese cuisines. It's an elegant, often expensive, and interactive experience focused on the chef's expertise and the day's best offerings, distinct from just ordering recommendations (osusume).
